The 32-year-old Spaniard and bay stallion VIP smashed the Mexican course as they finished just behind Salvador Onate in the four-rider jump-off, claiming valuable World Cup points as the North American season resumed.
Paolo is now an international class Jumping ace, but tennis was her first love, and as she explains in the video below it was only a matter of luck while at a tennis camp that she tried horse riding for the first time.
“Two afternoons a week we could just do an activity like bowling or cinema,” she recalls. “Then one day we went for a horse hack.
“That was the beginning of everything - I really wanted to try to do this sport!”
